This beet smoothie is creamy, easy to make and doesn’t even taste like beets! It’s refreshing, perfect for a quick snack or light breakfast and the vibrant pink color will impress just about anyone.
You know how they say an apple a day keeps the doctor away? Well I kind of feel like a smoothie a day keeps the doctor away! They’re such an easy way to pack in a lot of fruits and vegetables but still have a delicious drink that you’ll end up craving.
Beets aren’t my favorite vegetable, but they’re so good for you to I try to find ways to get them into my diet. My beet hummus is always a hit, but this beet smoothie has been my favorite as of late.
If you don’t like beets, don’t worry, you can’t taste them. The pineapple and yogurt mask the flavor really well and yield a super creamy and tropical flavor.
Key Ingredients
Beets: The star of this smoothie! You can use fresh or frozen raw beets, just make sure they are peeled! The skin is what has the strongest earthy flavor, and we don’t want any of that in the smoothie.
Berries: I used frozen mixed berries, but you can also just use strawberries, blueberries, blackberries etc. Fresh or frozen work well!
Pineapple: Seriously, pineapple is good in ANY smoothie. It adds a delicious tropical flavor and masks any beet aftertaste.
Yogurt: I used diary free vanilla greek yogurt, but any yogurt will work, dairy or not. I suggest unsweetened vanilla.
Lime Juice: This adds to that topical feel from the pineapple.
Chia seeds: For a little protein and fiber boost!
How to make this recipe
Peel and finely dice the beet and add to a high speed blender.
Add all remaining ingredients. Blend until completely smooth, adding more milk as needed to blend.
Taste and adjust flavors as desired. If you prefer it more sweet, you can add banana, honey or 1-2 pitted dates.
Pour into glasses & enjoy right away!
Can I make it in advance?
Smoothies in general are best served fresh, and this beet smoothie is no exception. If you want to prep it ahead of time, you can and it will keep for 24 hours. However, it may separate a bit in the fridge, so give it a good stir or shake before serving.
What fruit pairs with beets?
Pineapple are my go to fruit to put in a smoothie when I’m trying to mask the flavor of something else.
Beets can have an intense earthy taste (which is why we’ll peel them), but the pineapple, berries and lime juice cover that up really well. You can also add mango, any berries of your choice or even apple.
Can I freeze them?
You can definitely freeze your beets before blending! You don’t need to cook them before you blend, so just peel and finely chop/dice and freeze them in a freezer safe bag for easy use!
Blending tips
If you have a high speed blender, it will definitely come in handy for this recipe! Beets are tough so it helps to blend this smoothie for a good minute or so to really ensure everything is well combined, especially if you don’t have a high speed blender.

- 1 small peeled beet about 3/4 cup diced
- 1 cup frozen mixed berries
- 1 cup frozen pineapple
- ½ cup vanilla unsweetened greek yogurt I used Kite Hill Dairy Free
- 1 tbsp chia seeds
- 2 tbsp lime juice
- 1/2-1 cup non-dairy milk I used almond
Instructions
